Kosher Kitchen Requirements Attachment for GR doc
A. Kitchen Certifications and Training. 1. An initial walk-through at every identified MDOC facility that operate a Religious Kitchen. 2. Provide consulting services to assist MDOC to maintain Kosher Certification requirements including but not limited to: i. explanation and clarification of all food processing requirements; ii. proper food storage requirements; and iii. evaluation and Kosher determination of all food products. 3. Explanation and consulting services to facilitate and clarify requirements to Kashir all food equipment. 4. Explain and educate MDOC staff on rules/regulations (outside food, cleaning processes, etc.). 5. Provide recommendations to MDOC to maintain and improve activities necessary to maintain Kosher Certification. 6. Meet with the Food Service Director at each identified MDOC facility to review processes and answer any site-specific questions. 7. Educate MDOC staff on Kosher practices and standards as needed. 8. Identify any areas requiring proper signage and assist with the development of signage as needed. 9. Review MDOC's meal service processes at each facility including when food leaves the kitchen and is delivered to housing units to ensure Kosher standards are met and provide recommendations as needed. 10. Review MDOC's training materials and guidelines and provide comments and recommendations as needed. 11. Certify all compliant MDOC kitchens as Kosher Certified. 12. Provide detailed notes after review of kitchens with specific recommendations to achieve certification. 13. Provide follow up visits to MDOC facilities when changes in Food Service staff occur (i.e. Food Service Directors); 14. Provide "spot checks" or follow ups as needed for MDOC to maintain Kosher Kitchen certification. 15. Respond within 2 business days to any questions on Kosher processes/practices from MDOC staff. 16. Provide certification to any new facility or religious kitchen identified by MDOC during the term of the resulting contract. 17. Assist MDOC in reviewing department training materials and guidelines to provide feedback and make recommendations on maintaining Kosher Kitchens and certification as needed. i. Review MDOC's Kosher Manual and make recommendations as needed. B. Depositions, Testimony, and Consultation 1. Review MDOC's products/ingredients and provide consultation when needed to MDOC staff; 2. Provide ongoing consultation to MDOC during the contract period as needed; 3. Testify on behalf of MDOC in regard to certified Kosher Kitchens and services provided to MDOC; and 4. Provide deposition on behalf of MDOC in regard to certified Kosher Kitchens and services provided to MDOC |
